Grandma's Cool Whip Jello Salad

Not all tasty salads have to be high-calorie nightmares. Here is an easy Jello salad that has stood the test of time, and continues to delight weight-conscious folks for miles around! Give it a try!


1 small carton (4 oz.) Cool Whip (Low Fat or regular).

1 large package (6 oz.) Lime Jello.

1 small carton (4 oz.) Low Fat cottage cheese.

2 Tsp. Lemon Juice (Lime juice may be substituted here).

1 large can (8 oz.) of crushed pineapple.


Drain fruit well. Mix dry Jello with Cool Whip. Next, mix in juice. Then, fold in cottage cheese and pineapple (well drained). Chill.

Ready in 15 minutes. Any flavor Jello may be used. You may also add chopped pecans.
