DUTCH SKILLET PANCAKE

3 eggs, beaten
1 c. flour
1 1/3 c. milk
1 tsp. salt

Mix well. Grease skillet. Bake at 425 degrees for 10 minutes, then 375 degrees for 15 minutes or until golden brown areas appear on the cap of the pancake. This will puff up then fall in, flat, when removed from the oven. If you want, fill the concave with fruit or serve with butter and syrup. Micah can eat a whole one of these and still remain lanky. I'm on diet dog food. Micah usually puts white confectioner's sugar on his and a dose os maple syrup. I don't know if that's because it's the quickest way to land the pancake in his stomach or because it's actually tastiest that way. I am sure I will never know because there has never been a bite of that to hit the floor.
